Designed by Helen Chen, daughter of renowned Chinese food pioneer Joyce Chen, the Asian Kitchen Excalibur line of cookware helps bring Asian cooking into the Western home. Crafted from durable carbon steel with a 2 mm thickness, the cookware combines rugged construction with convenient non-stick coating, so food cooks traditionally but cleans up quickly. Named for their premium 2-layer non-stick coating, Excalibur pans feature secure riveted handles made of stay-cool Bakelite. Perfect for the rapid heating conditions of searing and stir-frying, they are safe for use on gas, electric, and induction stovetops.
This Excalibur wok is a substantial cooking tool, suited to family-size meals and high-volume ingredients like greens. It features a flat bottom, steep sides, and a useful helper handle. Fitted with a hanging ring, it measures 14 inches in diameter and should be washed by hand for best results. A 12-inch version is also available. --Emily Bedard
