Almejas are the distinctive, delicious clams native to the cool waters of Galicia. They are highly prized - if you encounter an inexpensive version, in all probability they originated outside of Galicia. Spaniards treat canned seafood as a supreme delicacy. These clams are harvested by hand from the tidal beaches of Galicia. Only the largest, plumpest clams are selected by Conservas de Cambados for canning. They are then carefully cooked in sea water, then placed one-by-one in a tin and covered with briny water. Extra care is taken o make sure that they are never overheated or overcooked. The result is a clam that tastes like it was just served fresh in a restaurant in Galicia. These clams are so valuable that the very sand under the tidal water is claimed by families in Galicia. 10 meter squares are demarcated by stones and seeded with baby clams. The area is covered with water during every high tide then becomes beach with the low tide. They are then harvested by rake - but only by their owners! The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Conservas de Cambados is located close to one of Spain’s largest Rías (estuaries), known as the 'Ría de Arousa'. Their facilities are very close to where the seafood is harvested, so they are able to use the freshest fish and shellfish available.
